RVA辅助稻米食用品质改良研究被引量:19

The high percent of starch in the milled rice have great effects on the eating quality of the cooked rice. Breeding rice with improved eating quality has long been the major objective in rice breeding programs. Starch pasting viscosity tested by Rapid Visco Analyser (RVA) serves as an important index in estimating the eating quality of rice. However, its utility in a rice breeding program has received few attention and has not been fully demonstrated. In the present study, the F 2:3 and F 3:4 seeds deriving from the Zhefu 49×Zhefu 728 were consecutively measured the RVA profiles of brown rice flour based on single-plant. The clustering analysis with different kinds of parameters of RVA suggested that once a line with desired RVA profile was selected in F 2:3 , the probability to select this kind of RVA profile from its F 3:4 progenies was as high as 51.8%. The present result was in agreement with genetic result that RVA profile parameters had a high heritability. Therefore, breeding better eating quality of rice can be accelerated with the assistance of RVA instrument.

籼米淀粉粘滞性的基因型与环境互作研究(英文)被引量:7

水稻精米中大约含有90%的淀粉,因此淀粉的特性对水稻的食味品质有很大的影响。淀粉粘滞性是预测稻米食用、蒸煮和加工品质的重要指标。本研究利用4个细胞质雄性不育系和8个恢复系配置的不完全双列杂交组合来分析淀粉粘滞性指标(崩解值、回复值和消减值)的胚乳、细胞质和母体基因效应及环境互作效应。结果表明:在崩解值、回复值和消减值的遗传变异中,遗传主效应方差分量占了64%以上,表明它们主要受遗传主效应控制,同时也受到基因型与环境互作效应的影响。崩解值、回复值和消减值的总遗传率分别为67.8%、79.5%、79.5%,而且普通遗传率占了总遗传率的75%以上,表明对这些性状的早世代选择有效,且在不同环境中选择效果相对稳定。

稻米淀粉品质遗传与改良研究进展被引量:48

本文介绍了稻米淀粉品质性状的含义和主要内容,较全面地总结了直链淀粉含量、糊化温度、胶稠度、RVA谱、支链淀粉结构、淀粉膨胀体积以及淀粉凝胶的质构和老化特性等性状的遗传研究进展。总结了淀粉品质与其它品质性状与农艺性状的遗传相关性,环境条件(灌浆结实期气温)及基因型×环境互作效应对稻米淀粉品质的影响,及分子辅助选择与基因工程技术改良稻米淀粉品质的研究进展。今后淀粉品质研究应集中在淀粉品质相关性状形成的基因网络解析、淀粉基因分子标记挖掘、淀粉品质的多基因聚合育种及淀粉品质分子设计的数据库建设。通过应用基础研究以及相关技术集成,特别是分子设计(聚合)育种技术的实践,有望培育出淀粉品质符合市场要求的优良品种。

单核苷酸多态性(SNP)是最新发展起来的继限制性片段多态性(RFLP)、微卫星标记(SSR)后的新一代分子标记,具有分布不均匀、丰度高、检测易实现自动化的特点。SNPs日益成为功能基因组学和分子标记辅助选择等领域研究的主要手段。本文主要介绍SNPs在水稻基因组中的分布、特点、检测及其在遗传育种中的应用。

Accurate Measurement of Pasting Temperature by the Rapid Visco-Analyser:a Case Study Using Rice Flour被引量:4

Pasting properties are among the most important characteristics of starch, determining its applications in food processing and other industries. Pasting temperature derived from the Rapid Visco-analyser (RVA) (Newport Scientific), in most cases, is overestimated by the Thermocline for Windows software program. Here, two methods facilitating accurate measurement of pasting temperature by RVA were described. One is to change parameter setting to ‘screen’ the true point where the pasting viscosity begins to increase, the other is to manually record the time (T1) when the pasting viscosity begins to increase and calculate the pasting temperature with the formula of (45/3.8)×(T1–1)+50 for rice flour. The latter method gave a manually determined pasting temperature which was significantly correlated with the gelatinization temperature measured by differential scanning calorimetry.
